These delicious, rich muffins serve as a great snack. Yields 10 muffins
3 eggs
1 cup light brown sugar
2/3 cup oil
1/4 cup orange juice
2 medium carrots, finely grated
1 and 1/2 cups 80% spelt flour
1 and 1/4 teaspoon baking powder
1/4 cup Gefen Ground Nuts
1 teaspoon Gefen Cinnamon
pinch salt
1 cup oats
1/4 cup slivered almonds
2 tablespoons shredded coconut
2 tablespoons Gefen Dried Cranberries
3 tablespoons oil
2 tablespoons silan, such as Heaven & Earth Date Syrup, or honey
Preheat oven to 325 degrees Fahrenheit (160 degrees Celsius).
Place eggs, sugar, and oil in a bowl and beat until combined. Add the rest of the ingredients and mix until just combined.
Pour batter into muffin cups.
Mix the granola ingredients in a bowl and sprinkle over the muffins.
Bake muffins for 15–20 minutes, until firm. Let cool before serving.
