Easy carrot cake or muffins are a delicious treat for brunch or snack. Topped with a classic cream cheese frosting.
4 eggs
2 cups sugar
1 and 1/2 cups oil
1 cup Haddar Applesauce
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
3 cups flour
1 teaspoon Gefen Vanilla Extract
1 teaspoon Haddar Baking Powder
3 medium carrots, shredded
1 cup chopped walnuts
additional shredded carrots
8 ounces cream cheese
1 cup confectioner’s sugar
2 tablespoons Gefen Vanilla Sugar
Beat eggs and sugar. Add oil and applesauce.
Slowly, add all dry ingredients.
Pour into a nine- by 13-inch or bundt pan. Bake for one hour and 20 minutes.
Preheat oven to 350 degrees Fahrenheit.
Blend cream cheese and sugars. Spread onto cooled cake.
Garnish with chopped walnuts or shredded carrots.
