Sometimes after the long Pesach meals, you just want a light, bite-sized treat that will satisfy the sweet tooth and make you happy – in that case, you’ll want to save these caramel-stuffed cookie dough bites recipe to try! They’re soft, chewy, oozing with caramel, and most importantly, super easy to make.
2/3 cups + 1 tablespoon Gefen Almond Flour
2 tablespoons Gefen Maple Syrup
2 tablespoons nut butter, such as Gefen Almond Butter
2 tablespoons Gefen Maple Syrup
2 tablespoons nut butter, such as Gefen Almond Butter
melted chocolate
Mix the almond flour, maple syrup and nut butter to form a cookie dough texture.
Make the caramel by mixing maple syrup and a nut butter.
In a silicone muffin mold, flatten out the cookie dough and create an indent with your thumb/spoon to fill with the caramel.
Fill the cookie dough cups with the caramel.
Melt chocolate chips (tip-melt with some coconut oil for a better texture).
Drizzle the melted chocolate on top and let the cups freeze for 25 minutes.
Pop out of the molds and enjoy!
