I am always looking for ways to twist around the ingredients and dishes we make all the time into something new and different. I love the combo of apples and sweet potatoes here, but my favorite part is the star on top. So easy, and so pretty.
2–3 large sweet potatoes, sliced to 1/2-inch (1-and-1/4-centimeter) circles
2–3 large Granny Smith apples, sliced horizontally to 1/2-inch (1-and-1/4-centimeter) circles, with seeds discarded
3 tablespoons Tuscanini Olive Oil
1/4 cup brown sugar
1 teaspoon Haddar Kosher Salt
1/4 cup margarine
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Toss sweet potato and apple slices in olive oil, brown sugar, and salt. Stack in a baking dish, alternating apples and sweet potatoes and ending with an apple slice with a star on top.
Place a dab of margarine on top of each stack and bake uncovered for one hour.
