4 cups carrots, sliced into 1/4 inch thick circles
3 tablespoons Bartenura Extra-Virgin Olive Oil
1 tablespoon maple syrup
2 tablespoons Gefen Honey
1/2 teaspoon dried thyme
1 teaspoon Haddar Kosher Salt
1/4 teaspoon black pepper
1/4 cup toasted pine nuts
1/2 cup pomegranate arils
Preheat oven to 450 degrees Fahrenheit. Line a baking pan with parchment and drizzle with oil.
Place carrots on baking sheet and drizzle with maple syrup and honey. Sprinkle thyme, kosher salt, and black pepper. Use tongs or hands to toss until carrots are evenly covered.
Place in oven for 15 minutes, stopping to stir every five minutes. Remove from oven. Top with pomegranate arils and pine nuts. Serve right away or leave as is covered until ready to serve. This recipe holds heat well on its own when covered.
