5 large potatoes
5 eggs
1 onion
2 tablespoons milk
1/2 tablespoon salt
1/4 teaspoon black pepper
1/2 teaspoon parsley flakes
1/2 teaspoon oregano
2 sticks butter, for frying
1 cup pizza sauce
1 and 1/2 cups shredded mozzarella
Mix eggs, milk and spices in mixing bowl, till combined.
Process potatoes and onion with stringy blade. When done, squeeze or drain mixture to get rid of excess water.
Mix potato mixture with egg mixture and mix till combined.
Heat up frying pan, melt one stick butter, on medium heat, until it’s bubbling slightly.
Spoon one tablespoon batter for each latke into frying pan, and try on both sides till golden, and firm.
When there is half the batter left, add another stick of butter to replenish, and wait till melted and bubbly.
Spread a spoon of pizza sauce onto latke. Sprinkle cheese generously on top of sauce.
Stack another latke on top of the first, and add sauce and cheese, then add one more set, leaving a layer of cheese and sauce on top.
Bake at 350 degrees Fahrenheit for 12 minutes.
