Golden gnocchi tossed with fresh garlic, herbs, and just-burst tomatoes. Light yet hearty, serve this dish on a bed of pesto with a dusting of Parmesan for the perfect meal.
1 package Tuscanini Gnocchi
3 tablespoons butter
3 cloves garlic, chopped
handful of cherry tomatoes
1/4 to 1/2 teaspoon salt, to taste
pinch of pepper
1 tablespoon fresh basil, chopped
1/2 teaspoon oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon thyme
3 tablespoons pesto
Parmesan cheese
Add butter to a pan set over medium heat, add garlic and sauté one minute. Add gnocchi and tomatoes and season with salt and pepper. Sauté until gnocchi is golden and tomatoes are burst, about five minutes. Season with herbs and toss to combine.
To serve, spoon about 3 tablespoons pesto on a serving plate and pile the gnocchi in the center. Grate over your desired amount of Parmesan cheese. Enjoy hot!
