Burritos are easy to make and fun to eat – as long as you have napkins handy! A great dinner inspired by Mexican flavors.
2 large onions, chopped
8 ounces mushrooms, fresh or canned, chopped
oil for sautéing
1 and 1/2 – 2 pounds lean ground beef
6 tablespoons salsa (mild or hot, to taste) or Tuscanini Marinara Sauce
10 large tortilla wraps
Sauté onions and mushrooms in oil until onions are transparent and mushrooms are soft.
Add ground meat and stir until meat forms clumps.
Add salsa or marinara sauce and simmer for 20 minutes.
Smear mixture onto wraps and roll up blintz-style.
Place wraps in a nine- by 13-inch pan and bake at 350 degrees Fahrenheit for 40 minutes, or until wrap is browned and crispy; check periodically.
