Chicken kebobs customized, the best dinner option for your kids. Start off with this versatile basic marinade that’s great with chicken, meat or vegetables and pick your favorite vegetables for the perfect family dinner. Watch Danielle make it in this video.

Ingredients

Marinade

  • 12 scallions, cleaned and roughly chopped

  • 10 cloves garlic

  • 1 cup fresh parsley leaves

  • the zest of 2 limes

  • the juice of 4 limes

Kebobs

  • 2 red peppers, cut into 2-inch squares

  • 2 yellow peppers, cut into 2-inch squares

  • 2 zucchini, cut into 1/2-inch slices

  • 24 whole cherry tomatoes

  • 2 purple onions, cut into big chunks

  • 1 eggplant, cut into 2-inch squares

  • 12 thin chicken cutlets, cut into 2-inch squares

  • fresh pita for serving

  • techina (Haddar Tahini) for serving

Directions

Make the Marinade

1.

Add scallions, garlic, parsley, lime zest, lime juice, salt and pepper to a food processor and pulse.

2.

While motor is running, slowly drizzle in the canola oil.

Prepare the Kebobs

1.

To assemble the kebobs, add half of the marinade to the chicken and combine. Allow chicken to marinade for 20 minutes.

2.

Meanwhile, cut up whatever veggies your family likes and divide the remaining marinade amongst each bowl of veggies.

3.

Set out skewers and allow everyone to assemble and customize their own kebobs. Alternatively, add all the chicken to a few kebobs and give each veggie their own individual skewers.

4.

Grill for three minutes on each side or until veggies and chicken are cooked thoroughly.

5.

Take everything off of skewers and place onto individual trays. Serve buffet style and enjoy!

Freeze? Could I freeze cutlets and vegetables (separately) in this marinade and then defrost and roast/ cook? Is there too much acidity in the marinade for the chicken you sit in it for so long?

I wouldn’t freeze in a marinade. It might be too intense when you cook it. You can freeze them separately and mix closer to event.

Yummy kebabs This went great with my fam!!! They all enjoyed it! The marinade was so easy and fresh it took my kebabs to whole diff level!!
