This recipe has been in my husband’s family for over 100 years. Whenever I serve it, my guests usually ask for the recipe. It is Jewish biscotti.
3 eggs, beaten
1 cup sugar
1 cup oil
1 tsp. almond flavor
3 and 1/2 cups flour
2 tsp. baking powder
2 capfuls lemon juice
1 and 1/4 cups chopped almonds
Preheat oven to 375F. Line two cookie sheets with parchment paper.
Combine eggs, sugar, oil, and almond flavor.
Make a well with the flour. Sprinkle with baking powder. When ready to use, add lemon juice. Combine flour mixture with liquid mixture.
Mix in nuts.
Make 4 strips/logs out of the dough, leaving room between them.
Bake 30 minutes. Remove from oven, slice warm, and replace in oven for additional 10 minutes.
