This steamed broccoli salad is not just healthy, it actually tastes good! The dijon vinaigrette really amps it up, turning boring broccoli to glam. Steam the broccoli till crunchy-tender and mix up the vinaigrette dressing with red wine vinegar, Dijon mustard and sautéed scallions and garlic. Good warm or cold as a side or salad.
2 pounds broccoli
1 tablespoon plus 1 teaspoon Bartenura Olive Oil
1/4 cup finely chopped scallions
3 cloves garlic, minced
2 tablespoons Kedem Red Wine Vinegar
2 tablespoons water
1 tablespoon Haddar Dijon Mustard
1/4 teaspoon pepper
1/8 teaspoon salt
Steam broccoli over boiling water for six minutes (should still be crunchy). Drain and place in serving bowl.
In a small pot, heat oil; add scallions and garlic. Sauté for three minutes. Remove from heat.
Add vinegar and remaining ingredients, stirring until blended. Pour over broccoli, tossing gently to coat.
