This is the side dish that rounds out your meal with something healthful.
4 medium sweet potatoes
1 egg plus 1 egg white
2 tablespoons orange juice
2 tablespoons soy milk
1 teaspoon Gefen Cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
32 ounces Beleaves Frozen Broccoli Florets
2 egg whites
2 tablespoons Gefen Light Mayonnaise
1/4 cup soy milk
1 and 1/2 teaspoons onion powder
1 teaspoon salt
1 teaspoon garlic powder or 3 cubes Gefen Frozen Garlic
pinch coarse Gefen Black Pepper
Preheat the oven to 350 degrees Fahreneheit.
Wrap sweet potatoes in foil. Place in a baking pan and bake for about an hour, until soft. Carefully remove foil and remove peel.
Place the cooked, peeled sweet potatoes into a mixing bowl. Add egg, egg white, orange juice, soy milk, cinnamon, nutmeg, and salt. Mix well.
Place in a 9- or 10-inch round baking dish and bake for 25 minutes.
Meanwhile, prepare the broccoli layer.
In a large pot, cover broccoli with water and bring to a boil. Boil until broccoli is very soft, about 15 minutes.
In a medium bowl, combine broccoli, egg whites, light mayonnaise, soy milk, onion powder, salt, garlic powder, and pepper.
Layer over sweet potato layer and use a spatula to smooth the top.
Return baking dish to the oven and bake for an additional 45 minutes.

Freeze Can this freeze well?
I don’t love to freeze broccoli kugel. I find it gets water. If you do, then put it straight into the oven when warming up.
Adding color to the plate Every other week my husband and I have Shabbat Friday night with his mother and her two care-givers.
