A delightfully easy and tasty dinner, this really takes just a few minutes to pull together. It’s fluffy and cheesy and hits the spot! Truly a simple Nine Days dinner that encompasses everything you need to get the family happily fed and satisfied!

Ingredients

Broccoli Quiche with French Fries Crust

  • 1/4 bag frozen steak-cut French fries

  • 4 eggs

  • 4 tablespoons flour

  • 1 cup milk

  • 1 cup light mayonnaise

  • 2 cups shredded pizza cheese, divided

  • 1 and 1/2 cups shredded muenster cheese

Directions

1.

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).

2.

Line the bottom of a 9 x 13-inch (23 x 33-centimeter) pan or 2 9-inch (23-centimeter) round pans with steak fries and set aside.

3.

Mix eggs in a bowl. Add flour and milk and beat until combined. Stir in mayonnaise and mix until combined.

4.

Set aside 1/2 cup shredded pizza cheese. Add remaining ingredients to the bowl and mix until all incorporated. Pour mixture over steak fries. Sprinkle reserved cheese on top.

5.

Bake uncovered for one hour, or until the top begins to brown and the center is firm.

Tips:

I like to make doubles of my Nine Days dinner recipes so that I can use the food for lunch the next day.
