Fun Facts: Broccoli, which originated in Italy on the Mediterranean coast, was brought to the United States by Thomas Jefferson. He was fond of the vegetable and grew it on his estate in Monticello beginning in 1767. Today China is the world’s top broccoli producer, growing eight million tons a year.
2 (12-ounce) containers fresh broccoli florets
1 tablespoon Gefen Olive Oil
2 garlic cloves
1 teaspoon soy sauce
salt and pepper, for sprinkling
16 ounces broccoli slaw
2 tablespoons Kedem Red Wine Vinegar
1/2 teaspoon garlic powder
1 teaspoon Gefen Olive Oil
dash of cayenne pepper
Preheat the oven to 375 degrees Fahrenheit.
In a baking pan, toss the broccoli florets with the olive oil, garlic, soy sauce, salt, and pepper. Bake for 20 to 25 minutes.
Meanwhile, toss the broccoli slaw with the red wine vinegar, garlic powder, olive oil, salt, pepper, and cayenne pepper.
Remove florets from the oven, combine with the dressed broccoli slaw immediately, and serve.
