From Bais Yaakov Cookbook
1/2 cup vegetable or canola oil
1/4 cup sugar
1/4 cup yellow mustard
3 tablespoons white vinegar
4 cloves garlic crushed
1 teaspoon paprika
4 (4 oz) salmon fillets, 1 1/2 inches thick, skin off
1 cup flavored bread crumbs or panko crumbs.
Preheat oven to 350°F.
Whisk oil, sugar, yellow mustard, white vinegar, garlic and paprika in a small bowl.
Pour half of the sauce in a small sauce pan and set aside.
Coat salmon fillets with remaining sauce and then dredge in bread crumbs.
Place into a greased 9-inch baking dish.
Bake uncovered until tender and flaky about 45 minutes
Warm reserved sauce in a small sauce pan. Drizzle over fish before serving. Serve hot.
Delicious served warm or at room temperature. If you prepare it in advance, make sure to reheat loosely covered, so that it doesn’t get soggy. Uncover for a few minutes to crisp.
