Boston Cream Pie

This is sure to be a winner with its moist cake, light chocolate creamy interior, and classic chocolate glaze. Don’t be fooled by the different layers and steps, this is a very easy cake to put together!

Ingredients

Cake

  • 6 eggs

  • 2 and 1/2 cups sugar

  • 2 tablespoons Gefen Vanilla Sugar

  • 3/4 cup oil

  • 1 tablespoon grated lemon rind

Cream Filling

  • 20 ounces whipping cream

  • 2 packages instant vanilla pudding OR 2 packages instant chocolate pudding and 3 tablespoons chocolate syrup

Glaze

Directions

Prepare the Cake

1.

Preheat oven to 350 degrees Fahrenheit.

2.

Beat eggs and sugar for 10 minutes. Reduce speed and gradually add remaining ingredients.

3.

Pour batter into two lined 10- by 16-inch baking pans.

4.

Bake at 350 for 30 minutes.

Prepare the Cream Filling

1.

Beat whip cream until stiff. Fold in pudding gently.

2.

When cakes are completely cooled, spread cream over one cake. Invert second cake over cream.

Prepare the Glaze

1.

Mix confectioners sugar, cocoa, and vanilla sugar. Add oil and water and stir vigorously.

2.

Spread over cake immediately.

pudding am i supposed to make the pudding before i fold it in, or do i just use the pudding mix(powder)?

You can try to use two 9×13 pans but you can’t fill them up all the way so you’ll have leftover batter.

and you would probably need to adjust the cooking time to a little less.

Is great as a Shabbos dessert and would be a great birthday cake too!
