The pre-Pesach rush can be the most difficult time to keep up with healthy eating habits. We’re busy cleaning, prepping, cooking…and we often end up putting our own needs on the back burner. But with a little bit of prep, some organization, and some super-easy and quick recipes (like the one below), this year can be different! This recipe calls for baked apples, which add sweetness and great flavor to the muffin. I like to bake a full pan of them and have them ready in my fridge. Alternatively, you can use prepared applesauce as a quicker option. Yield: 1 mug cake
1/2 cup rolled oats
1 tablespoon Gefen Almond Milk
1 tablespoon Gefen Almond Butter
1/4 teaspoon Gefen Cinnamon
1/4 teaspoon baking soda
1/4 cup mashed baked apple (see below) or prepared applesauce, such as Gefen
1 handful blueberries
1 egg
apples
Peel and core apples and sprinkle with cinnamon.
Bake at 350 degrees Fahrenheit until soft (approximately one hour).
Mash to use in muffins or enjoy as a snack.
In a bowl, mix all ingredients. Pour into a 16-ounce (or bigger) mug.
Microwave for three minutes.
