Black Bean Fiesta Salad in a Cup

Ingredients

Salad

  • 2/3 cup cooked brown rice

  • 1 cup black beans, rinsed

  • 1 cup sliced red onion

  • 1/2 cup grape tomatoes, halved

  • 2–3 cups chopped romaine lettuce

Chili-Lime Dressing

Directions

1.

In a jar, combine dressing ingredients.

2.

Pour two to three tablespoons dressing in each cup. Layer brown rice, beans, red onion, tomatoes, and lettuce. Fill in any empty spaces with lettuce.

3.

Cover with lids and place a fork in each straw opening.

4.

When ready to eat, shake cup to mix all ingredients.
