The combination of the sticky-sweet peaches and the bitter radicchio will make your palate sing! These versatile sesame clusters can be used anywhere, from salad toppers to dessert brittle.
1 large head radicchio, coarsely chopped
2 cups kale (if not using radicchio, use 4 cups kale)
2-3 peaches, grilled until softened
1/2 bunch parsley, diced but still some leaves intact if desired
sesame clusters, recipe follows
1/2 cup sliced cherries (optional)
2 – 2 and 1/2 tablespoons Haddar Dijon
2-3 tablespoons vinegar (I used Tonnelli Apple Cider)
1 – 1 and 1/2 tablespoons stevia, or use any sweetener you like
1 – 1 and 1/2 teaspoons Haddar Kosher Salt
1 tablespoon oil
1 large egg white or 3 tablespoons Haddar Egg Whites
3 tablespoons sugar or xylitol
1/2 teaspoon Haddar Kosher Salt
1/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup sesame seeds
Combine all dressing ingredients in a large glass jar and shake well.
Toss greens and parsley in a large bowl. Top with peaches, sesame clusters, and cherries if using. Add dressing just before serving.
Preheat oven to 350 degrees Fahrenheit.
Whisk egg white in a small bowl until foamy. Add sugar, salt, cinnamon, cloves. Add sesame seeds and toss to coat.
Spoon sesame mixture into a Gefen Parchment-lined baking sheet, using a quarter teaspoon. They should be about half the size they are in this photo.
Bake, until golden brown, about 10-15 minutes. Let cool.
