I love starting my mornings off with a sweet and “good-for-you” breakfast to go along with my coffee. When I realized how expensive wholesome breakfast bars are in stores, I decided to make my own! The results are these yummy, better than store-bought, 100% good-for-you best ever breakfast bars:)
1 cup of dried, pitted prunes
1/4 cup of honey
1/4 cup of almond butter
1 cup of unsalted sliced almonds
1.5 cups of rolled oats
1/4 tsp of cinnamon
1/4 tsp of vanilla extract
On a lined baking sheet, toast oats at 350 degrees F just until slightly golden, about 10 minutes. (This brings out a really great flavor and texture!)
In a food processor, pulse the prunes until they form a dough-like ball.
Place the oats, almonds, processed prunes, and cinnamon into a medium mixing bowl.
Over low heat, warm up the honey and almond butter in a small saucepan. Stir until combined. Turn off the flame and stir in the vanilla. Add this mixture to the mixing bowl and combine all the ingredients, evenly dispersing the prune ball.
Line a small 8×8 baking sheet with aluminum foil. Press the mixture into the pan until flattened. Cover with plastic wrap and let the pan firm up in the freezer for at least 20 minutes. Once firm, cut into 10–12 bars and enjoy!
