Ingredients

Juicy Broiled Chicken

  • 1 and 1/2 pounds chicken breast, cut thinly

  • 1/4 cup mayonnaise

  • 1 teaspoon chili powder

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 1/2 teaspoon salt

  • 1 teaspoon smoked paprika

  • 1 teaspoon sweet paprika

  • 1 tablespoon oil

Parsley Garlic Rice

  • 2 cups jasmine rice

  • 1 and 1/2 teaspoons salt

  • 6 cubes Dorot parsley or cilantro

  • 3 cubes Dorot garlic

  • 4 cups plus 2 tablespoons water

Guacamole

  • 2 avocados

  • 1 tablespoon lime juice

  • 1 small red onion, diced

  • salt, to taste

To Assemble

  • salsa

  • iceberg lettuce

  • tortillas and/or tortilla chips

Directions

Prepare the Juicy Broiled Chicken

1.

Line a baking sheet with foil.

2.

Mix the chicken breast with the mayonnaise, oil, and spices. Marinate or use right away.

3.

Place the pieces of chicken on the lined baking sheet. Broil on high for about four minutes on each side, longer for thicker pieces. Once cooked, cut the chicken into cubes.

Prepare the Parsley Garlic Rice

1.

Preheat oven to 400 degrees Fahrenheit.

2.

Mix all the ingredients in a baking dish and bake for 45 minutes. Allow to sit an additional 10 minutes covered. Uncover and mix.

Assemble

1.

Layer rice, lettuce, cubed chicken in bowl. Add guacamole and salsa then top with crushed tortilla chips. Alternatively, wrap up in a tortilla.

I made the broiled chicken one shabbos instead of schnitzel and it was delicious! Soft and flavorful and extremely easy!
