This stunning and delicious dessert can literally be prepared in minutes with no mixer in sight! It’s my new go-to dessert when I’m having company.
1 and 1/2 cups Glicks Flour
1 tablespoon sugar
1/4 teaspoon salt
1 stick plus 1 tablespoon margarine, chilled
4 tablespoons water
2 and 1/2 cups fresh or frozen berries (I used strawberries, blueberries, and cherries)
1/4 cup sugar
2 tablespoons Gefen Cornstarch
1 tablespoon Glicks Flour (only if using frozen fruit)
1/2 teaspoon Gefen Cinnamon
2 tablespoons Tuscanini Raspberry or apricot fruit preserves, divided
sugar, for sprinkling
In a bowl, mix dough ingredients by hand until a smooth dough forms. Flatten into a disc and refrigerate in a resealable bag for one hour.
Preheat oven to 350 degrees Fahrenheit.
In a bowl, combine filling ingredients.
Once chilled, roll out dough between two pieces of parchment paper to form a 12-inch circle.
Smear one tablespoon jam in the center of the dough. Place a heaping mound of the filling in the center, leaving a two-inch border. Fold the dough over the edge of the fruit, pleating as you go around. Brush with remaining jam and sprinkle with some more sugar.
Bake for 30 minutes. Let cool to room temperature before serving.
