Very healthy bean soup with few points on Weight Watchers.

Ingredients

Bean Soup

  • 1/2 cup of white beans, washed well

  • 1 can chick peas, washed and drained

  • 1/4 cup lentils, must wash well

  • 2 celery stalks, chopped  

  • dash salt and pepper

  • 3 fresh tomatoes, cut small

  • 1 teaspoon avocado or grapeseed oil

  • 4 minced fresh garlic

  • 1 onion, diced small

  • 2 carrots, diced

  • 1 yellow zucchini, diced (with skin)

Directions

Prepare the Bean Soup

1.

First sauté onion and garlic for a minute, then add vegetables and ingredients and spices. Let cook all together, then fill pot with water and let it cook for a good hour.

Optional, not on WW, I add vermicelli pasta toward the very end.
