Submitted by Toba Spitzer. The only hard part of this recipe is the clean up, so I often double the recipe and freeze one kugel for another week.
4 eggs
3/4 cup oil
1 tablespoon salt
6 Idaho potatoes
Preheat your oven to 500 degrees Fahrenheit.
Beat the eggs in a large bowl.
Add the oil and salt and mix well.
Peel the potatoes immediately before grating.
Grate the potatoes with the smallest blade on your food processor and add to the bowl.
Mix the potatoes and the rest of the ingredients well, using gloved hands – that’s the only way to ensure everything is well incorporated.
Transfer the mixture to a parchment lined or oil sprayed 6×9 inch baking pan.
Bake on 500 degrees Fahrenheit for 40 minutes.
Lower the oven to 400 degrees Fahrenheit and bake for another 40 minutes.
