Basic Marble Cake

This easy parve marble cake recipe will give you pretty and elegant results time after time. Keep it basic or top with a sprinkle of confectioners’ sugar or Brynie Greisman’s chocolate frosting. Yields 1 10- by 16-inch baking pan.

Directions

Prepare the Marble Cake

  1. Beat egg whites until stiff, add sugars, beating until peaks form. Add yolks and oil.

  2. Sift together flour and baking powder. Add alternately with orange juice.

  3. Pour three quarters of batter into 10- by 16-inch baking pan.

  4. Combine cocoa with remaining batter and pour over light batter.

  5. Swirl with fork for marble effect.

  6. Bake at 350 degrees Fahrenheit for one hour.

Variations:

Instead of marbleizing with cocoa, add one of the following to the batter: 1 cup coconut or 3 tablespoons coffee, diluted in a few drops hot water
