Delicious & healthy, my husband’s favorite for many, many years!

Ingredients

Barry's Mandelbroit

  • 1 1/2 C flour (can substitute with 1:1 gluten-free flour)

  • 1 tsp baking powder

  • 1/2 C almond flour

  • 1 tsp orange extract (can substitute with almond extract)

  • 2/3 C sugar (can substitute with coconut sugar)

  • optional add-ins: walnuts, almonds, or chocolate chips

  • 1/4 cup olive oil

  • 3 egg whites

  • 1 whole egg

Directions

Prepare Barry's Mandelbroit

1.

Preheat oven to 350.

2.

Line a cookie sheet with parchment paper.

3.

Cream sugar & oil.

4.

Mix in all eggs.

5.

Add flour & baking powder.

6.

Stir in almond flour & extract.

7.

Pour onto cookie sheet and spread into a rectangle, 1/2″ thick.

8.

Bake 20 minutes or until lightly browned.

9.

Cut into strips 3″ wide and then bars.

10.

Separate bars and bake again for 10 minutes until crisp.
