We love these muffins. It’s kind of incredible that wholesome muffins like this can be just as yum (or more) than the junky ones. With no mixer needed, I make these without any hesitation at all. Watch 4 Amazing Things to Bake with Spelt Flour.
1 and 3/4 cups Shibolim Extra Fine Whole Spelt Flour
3/4 cup oats
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup brown sugar
1/2 cup oil
1/4 cup Manischewitz Honey
2 eggs
1 teaspoon vanilla
3 ripe bananas (2 cups total), mashed
1 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with cupcake liners. (This recipe makes 18 medium muffins, so you will need to use two muffin pans or bake in batches.)
In a bowl, combine all dry ingredients (flour through sugar). Separately, whisk together oil, honey, eggs, and vanilla. Add wet ingredients and mashed bananas to dry ingredients and mix to combine. Fold in chocolate chips.
Add batter to muffin pan and bake for 20 minutes. (Minis will cook for less time.)
Yield: 18 medium muffins or 54 mini muffins
