Have bananas that are going bad? Don’t throw them out! Instead make these delicious, easy to make, and healthy muffins!

Ingredients

Banana Muffins

  • chocolate chips (optional)

  • 1/2 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 cup sugar or sweetener of your choice ( please keep in mind that this is already less than the original recipe called for!)

  • 1 cup rice flour (or 1 1/2 cups regular flour instead of the rice flour and oats)

  • 3 big bananas, or four small ones (mashed)

  • 1 egg

  • 1/2 cup quick oats ( smaller pieces than regular)

  • 1/3 cup oil

  • dash of salt

  • 1/2  to 1 tsp vanilla

Directions

Prepare the Banana Muffins

1.

Mix all ingredients together.

2.

Bake at 350 for 25 minutes.
