This dish perfectly blends the sweet, sweet potatoes with salty, melted cheese and savory salmon, creating a deliciously balanced and satisfying meal.
6 sweet potatoes
1 loaf of salmon
shredded cheese
Green Goddess spice (Trader Joes)
Rub the salmon with the Green Goddess spice and bake at 350 degrees Fahrenheit for 15 minutes.
Clean and pierce the sweet potatoes, then microwave them for five minutes. You’ll need to do this in two batches of three potatoes each.
Once microwaved, cut the sweet potatoes in half. Arrange them in a 9 x 13-inch baking dish.
After the salmon is done, shred it with your hands and sprinkle it over the sweet potatoes.
Top with shredded cheese and a bit more Green Goddess spice. Return to the oven until the cheese is melted. Serve immediately.
