Baked Breaded Sweet Chili Cauliflower

One winter, while in a Florida restaurant, I enjoyed an amazing appetizer: a fried, battered breaded cauliflower, topped with sweet chili sauce. This dish is inspired by that appetizer…except it’s baked, not fried.

Prepare the Cauliflower

1.

Preheat oven to 425 degrees Fahrenheit. Grease a baking sheet with nonstick cooking spray.

Put frozen cauliflower in a two-gallon bag. Add flour and shake it well so that the cauliflower is fully covered.

3.

In a small bowl, beat eggs. Pour into the bag with the cauliflower and mix well.

4.

Add the bread crumbs and spices to the bag and mix. At this point, the cauliflower should be fully covered in crumbs.

5.

Spread cauliflower on the prepared baking sheet and spray top of cauliflower generously with nonstick cooking spray.

6.

Bake for 45 minutes, or until the tops of cauliflower begin to turn brown.

7.

Remove from oven and serve with sweet chili sauce, either poured on top or used as a dipping sauce on the side.

Notes:

You can prepare an extra batch of this cauliflower to keep in the freezer for another time. Simply, prepare as listed above up until step five. After laying the cauliflower flat on the cookie sheet, freeze for a few hours. At this point, you can then transfer the cauliflower to a freezer bag and freeze until ready to use. When you are ready to use it, just continue from step five.

Love Love this recipe! So easy to prepare instead of buying the ready made ones. Like the addition of the sweet chili.
