Make your own bagels at home with this great recipe from the Heimishe collection. The dough itself is egg-free. Yields 24 bagels
8 and 1/2 cups flour
2 ounces yeast
3 cups warm water, divided
2 tablespoons salt
7 tablespoons sugar
poppy or sesame seeds (optional)
1–2 eggs, beaten, for egg wash
Dissolve yeast in part of the water. Combine all ingredients and knead well. Let rise for 20 minutes.
Divide dough into 24 pieces. Roll each piece into seven-inch strands. Twist into pretzel shape.
Prepare a large pot of salted water and bring to a rolling boil.
One by one, drop each bagel into the pot. Cook for 30 seconds on each side. Drain and place on greased cookie sheet.
Brush with beaten egg, sprinkle with poppy or sesame seeds. Bake for 35 minutes at 350 degrees Fahrenheit.

My daughter made these bagels while using white spelt flour, (shibolim brand), and it came out delicious as well.
Water Is the second part of the water used for the boiling part?
The 3 cups of divided water- part of it should be dissolved in yeast and then the other part is used in the dough. Then you heat up a big pot of water to boil them.
Yeast Can dry yeast be used and if so how much?
I believe active yeast and dry yeast can be used interchangeably. You wouldn’t need to change the measurements.
These were amazing and very easy and quick to make. I used half whole wheat flour and half white flour, needed more flour than it called for. Only 20 minutes to rise. Taste like bagels.
