This quick and easy pizza recipe is great for brunch or dinner. The avocado-onion topping adds class and awesome taste to your typical pizza.
3/4 cup warm water
1 tablespoon sugar
1 and 1/2 teaspoons yeast
1 and 1/2 – 2 cups flour
1/2 tablespoon salt
2 teaspoons olive oil
1-2 tablespoons olive oil, for frying
1 red onion, sliced
pizza sauce
shredded mozzarella (or cheese of your choice)
1 avocado, sliced thin
SaladMate Caesar Dressing
In a mixing bowl, combine the warm water with yeast and sugar. Let sit a few minutes to proof the yeast.
Once it starts to grow, add the salt, olive oil and one and a half cup of flour. Mix until the dough no longer sticks to the sides of the bowl (you may need to add more flour). Set aside and let it rise for five minutes before working with it.
Heat olive oil over low heat in small pan and add onion slices. Sauté over low heat for approx. 15 minutes or until onions become soft and start to brown.
Turn on toaster oven to 450 degrees Fahrenheit.
Roll out the dough. For personal pies, divide the dough in half.
Spread pizza sauce on the dough and sprinkle shredded cheese on top. Arrange the avocado slices in a flower in the center of the pie and add onions on top. Sprinkle a little more cheese on top and drizzle with Caesar dressing.
Place on parchment paper on toaster oven rack and bake for 15 minutes or until done.
