Summer in a dish! This fresh and light pasta salad is bursting with flavor.

Ingredients

Avocado Pasta Salad

  • 10 ounces pasta of your choice, such as Heaven & Earth

  • 1 small purple onion, diced

  • 2 and 1/2 tablespoons oil

  • 1 can Gefen Corn, drained

  • 2 cups cherry tomatoes

  • handful of fresh, cleaned parsley

Dressing

Directions

1.

Cook the pasta according to the instructions on the package.

2.

Prepare the dressing by combining all the ingredients in a small bowl. Use a hand blender to blend everything until smooth.

3.

In a pan, heat the oil over medium heat. Add diced onions and cook for five minutes. Then add the drained corn to the pan and cook for an additional eight to 10 minutes.

4.

In a large bowl, combine the cooked pasta with the rest of the ingredients. Mix in the dressing and toss well.
