For me, a cold day equals hot soup! This recipe was given to me by a dear friend who is always trying to “up her game” in everything she does. Making healthy dinners for her family is just one more way she tries. Thank you, Aviva!
2 onions, chopped
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
2 stalks celery, sliced
2 carrots, sliced or 1 bag shredded
1 box of mushrooms, sliced
1 zucchini, sliced
24 ounces Beleaves Riced Cauliflower
whatever other vegetables you have in the house that you want to throw in, fresh or frozen
1 handful split peas
1/4 cup Tuscanini Tomato Sauce or 2 tablespoons tomato paste
2 bay leaves
salt substitute or salt, to taste
pepper, to taste
water, to cover the vegetables
Sauté onions and garlic in water.
Add vegetables and split peas and remaining ingredients. Bring to a boil and then lower to simmer for 30 to 45 minutes.
