This light salad is delicious, nutritious, and easy!

Ingredients

  • 2 (1-pound) bags frozen cut asparagus (see note)

Dressing

Directions

Make the Salad

1.

Slice hearts of palm and red onion; mix with asparagus.

2.

In a separate bowl, mix dressing ingredients very well and pour over vegetables.

Notes:

In order to properly inspect asparagus for any kind of infestation, the tips and triangular side leaves must be shaved off, which is why only those sold with a reliable hechsher (primarily) frozen are recommended for use.

Fresh Can I use fresh asparagus? Should I cook it first?

Yes, you could use fresh asparagus, however, it is much more difficult to check for bugs so be careful. Yes, cook in first.

Will canned asparagus work? Here in Israel, we don’t have frozen asparagus, but we do have canned (really glass bottled in brine) asparagus spears. Would that work as well?
