It’s springtime, which means asparagus are at their prime and freshly picked. They’re at their peak of nutrition and flavor, so be sure to make the most of them. This cheesy asparagus tart is a good place to start!
1 sheet puff pastry dough, thawed according to package directions
1 pound asparagus
8 ounces regular cream cheese, softened
1/4 cup finely chopped red onion
2 to 3 tablespoons finely chopped fresh, cleaned chives
gouda cheese, diced, for sprinkling
salt, to taste
black pepper, to taste
Preheat oven to 400 degrees Fahrenheit.
Place a large piece of parchment paper on the counter and lightly dust with flour.
Transfer puff pastry to the parchment paper and roll out into a large rectangle, roughly 10 to 12 by 16 inches. Score a one-inch border around the pastry and use a fork to prick all over the center of the rectangle. Bake for 15 minutes or until lightly golden.
In a small mixing bowl, combine cream cheese, red onion, and chives. Spread cream cheese mixture over the center -of the puff pastry, leaving the border empty.
To prepare asparagus, shave down the tips and remove the triangle parts along the stems to eliminate the locations where insects tend to be found (you can use a vegetable peeler). Wash well, then trim the bottoms.
Top the pastry with asparagus spears and a generous sprinkle of gouda, salt and pepper. Bake for 20 to 30 minutes, until asparagus is tender.
Remove and let cool slightly before serving.
