A modern appetizer with umami undertones. This is one appetizer that will please your guests.
2 pints cremini (baby bella) mushrooms
1 pound ground chicken
1/3 cup hoisin sauce
1/4 cup sliced scallions
Gefen Sesame Seeds, for garnish
1 tablespoon water
2 tablespoons hoisin sauce
Remove stems from mushrooms, clean caps, and set aside.
Preheat oven to 400 degrees Fahrenheit.
In a bowl, mix ground chicken with hoisin sauce and scallions (reserve a few teaspoons for garnish).
Scoop one tablespoon of the chicken mixture into each mushroom cap. Bake for 20 minutes or until chicken is cooked through.
In a bowl, mix glaze ingredients. Glaze the chicken, then place on the top rack in the oven and broil on low for one to two minutes, until slightly browned.
Assemble: Skewer mushrooms horizontally on medium-sized skewers and garnish with sesame seeds and reserved scallions.
