The pairing of carrots, beets, sprouts, and jalapeno with strawberries and watermelon turn this salad into a plate where each bite is exciting. Eat anytime, and feel like summer no matter when! I have given you the option of two dressings- one lighter, one more sweet!

Ingredients

Salad

  • 5 cups kale/arugula

  • 1 cup alfalfa sprouts

  • 1/4 cup diced watermelon

  • 3 strawberries, diced

  • 1/2 jalapeno, diced

  • 1/4 cucumber, diced

  • 2-4 shaved carrots

  • 1 raw golden beet, julienned

  • 2 tablespoons hemp hearts (optional)

Cinnamon-Tahini Dressing

  • 1/2 teaspoon cinnamon

  • 1/4-1 teaspoon salt

Lime Dressing

Prepare the Salad

Combine salad ingredients, and dressing ingredients of your choice. Dress and enjoy!
