If there’s ever a dish that can enhance a table like a live bouquet, as well as enhancing your meal with all its nutritional goodness, it’s a salad. Summer is the season of watermelons and peaches, as well as grilling and barbecues. Grill the fruit, serve with arugula, feta cheese and a lime dressing to bring all the flavors together. It’s not just another dish, it’s the one everyone will be talking about.
6 ounces Ta’amti Feta Cheese
4 cups cubed watermelon
4 to 6 peaches (depending on size), sliced
1 (5-ounce) container arugula
1/2 cup Tuscanini Olive Oil
1 tablespoon Gefen Honey
1/4 cup orange juice
1/4 cup Heaven & Earth Lime Juice
4 ounces mint leaves, chopped
4 ounces fresh basil, chopped
Grill watermelon and peaches just long enough to create grill marks, about 20 seconds for the watermelon and one minute for the peaches. (If you don’t have a dairy grill pan, you can use a skillet instead.)
To make the dressing, whisk olive oil, honey, orange juice, and lime juice until emulsified. Add chopped mint and basil and stir to combine.
Add arugula to a large bowl or platter and top with grilled watermelon and peaches. Top with crumbled feta cheese. Serve dressing on the side, and drizzle on individual portions immediately before eating.
