A Food Fight, round 9 recipe.
2 apples, cut in small chunks
1/4 teaspoon cinnamon
2 tablespoons brown sugar (optional)
4 squares Gefen Puff Pastry Dough
slivered almonds and crushed pecans, for garnish
1 large ripe avocado
1/4 cup coconut milk, unsweetened (I like Califia Farms)
pinch cinnamon
1/4 – 1/3 cup maple syrup
3–4 tablespoons unsweetened Gefen Cocoa
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Mix the apples, cinnamon, and brown sugar together and fold into a puff pastry dough square.
Fold the dough closed and tuck all the ends in. Flip over and place on a baking sheet. Repeat with remaining squares.
Bake for 15–20 minutes, until golden and puffed.
Blend all ingredients with a mini blender or food processor.
If serving immediately, pour the pudding over the cooled apple crisp and top with almonds and pecans.
If assembling in advance, place the apple strudel on the side of the plate with the pudding next to it.

You can make it up to 4 days in advance. Rorie doesn’t suggest freezing it.

Pure pudding Isn’t there supposed to be apple sauce in the pudding? How much, if so? Also, if I don’t have avocado, is there a substitute. Thank you.
No applesauce in the pudding. The avocado is the main ingredients. Hard to say how to substitute it.
