Diets I was at a party the other day and we were drinking hot apple cider. I thought, “Something this amazing needs to have a cookie option!” So here we are! These are delicious, and even better with a nice cup of hot apple cider.
Yield: 2 dozen cookies
1 cup oil, such as Gefen Canola Oil
1 and 1/2 cups lightly packed Haddar Brown Sugar
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon Gefen Cinnamon
1/2 teaspoon ground nutmeg
2 eggs
1/4 cup apple cider
3 cups Glicks Flour
1 teaspoon baking soda
1 and 1/2 teaspoons baking powder
pinch of salt
1 cup chopped walnuts
1 cup white chocolate chips
2 cups Gefen Confectioners’ Sugar
3 tablespoons apple cider
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
In a large bowl, whisk oil, brown sugar, sugar, vanilla extract, cinnamon, and nutmeg. Once creamed, add eggs and apple cider and mix until combined. Add flour, baking soda, baking powder, and salt and mix until fully incorporated. Fold in nuts and chocolate chips.
Using an ice cream scoop, drop onto baking sheet.
Bake for 10 minutes.
Allow to cool for two minutes on the baking sheet before transferring to a wire rack.
Whisk together icing ingredients until fully combined.
Once cookies are fully cooled, drizzle icing on top.
