This mini apple cake dessert is very easy and very adaptable. You can add other fruits like plums, pears, etc., you can sprinkle with cinnamon, confectioners’ sugar, brown sugar, or whatever you like. You can even prepare this recipe as one big cake using a square or loaf pan, or you can halve the recipe. It also freezes well! It’s a show-stopper every time. Yields 24 miniatures.

10 apples (any kind)
2 cups sugar
1 cup oil
2 teaspoons vanilla essence
1 and 1/2 cups self-rising flour (or regular flour with 1 teaspoon baking powder)
6 eggs
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius). Grease round muffins trays very well.
Mix all ingredients together except apples.
Cut apples into cubes and place into muffin trays. Pour batter over apples until three-fourths full.
Cut additional apples into thin slices and place on top of batter, or create your own design using cookie cutters, etc…
Bake for 20 to 25 minutes. Turn out once cooled.
Serve on mini gold disposable rounds, as shown in the picture, available on Amazon or most high-end party shops.
