Submitted by Mimi Weiss This recipe is so versatile, you can add any vegetable or starch and chicken cutlets or on the bone. It is great for all ages – husbands, kids, teens and even picky kiddos.
Chicken (could use cutlets or bone-in chicken)
Italian dressing (can do the light one)
1 C. any starch (orzo, white or brown rice)
Frozen vegetables (mixed veggies, string beans broccoli, or cauliflower)
2 C. Boiling Water
2 T. Chicken soup consommé
Optional French’s fried onions on top
Preheat oven to 375 degrees Fahrenheit.
Prepare a large Pyrex with parchment paper and spray it with Pam
In a bowl combine chicken with Italian dressing, warm water and chicken soup consommé. Once chicken is evenly coated add the vegetables and starch of your choice. Mix again well.
Add everything to the Pyrex dish.
Bake covered for 1 and 1/2 – 2 hours.
