This oatmeal cookie recipe is legit addictive!!!
I used to rave about these cookies to my friends and they thought I was off the bat…”Like seriously? You crave oatmeal cookies?”
Till they tasted it….
Great for an on- the- go breakfast, afternoon snack, Shaluch Manus, and even something homey to send to your son in Eretz Yisrael. They freeze well and stay fresh long even without freezing.
3 cups old fashioned oats
1 cup Shibolim whole wheat flour. (I’ve tried it with other companies and didn’t get the same results)
1/2 cup honey toasted wheat germ
1 cup light brown sugar
1 vanilla sugar
1 tsp ground cinnamon (not optional as it really adds flavor- I sometimes put a little more)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 eggs
1 cup oil or Betterine (melted)
1 cup chocolate chips
1/2 cup caramel chips (optional)
Line 2 sheet pans with parchment paper and preheat oven to 350 degrees Fahrenheit.
Combine all ingredients in a large mixing bowl. Mix until combined.
Using a standard ice cream scoop, scoop balls of cookies and place onto prepared sheet pans. (About 12 fit on a half-size pan.)
Bake for 15–17 minutes.
Yields about 25 cookies

I grinded the oats, and then put 4 eggs
Even better than I thought… Seriously did vanish!! I would change the amount of servings to 4!
YUM!!!! This recipe is a real hit!!!
I would totally rename it to VANISHING OATMEAL COOKIES!!!
