These açai Greek yogurt cheesecake bites are the perfect pick-me-up that are healthy enough to enjoy every day. Coming in at under 85 calories apiece, you might even have two! Pair that with a bright purple blueberry lemonade slush< and spend a few minutes in food heaven that is actually good for you!
1 (8-ounce) container low-fat cream cheese
3/4 cup plain Greek yogurt
1/4 cup Gefen Honey
1/4 cup açai purée
2 whole eggs + 1 egg yolk
1/2 teaspoon Gefen Vanilla Extract
1 cup powdered sugar, such as Gefen Confectioners’ Sugar
1 to 2 tablespoons açai purée (see note)
1/4 teaspoon Gefen Lemon Juice
toasted Gefen Sesame Seeds, optional
Preheat oven to 350 degrees Fahrenheit.
Mix cream cheese, yogurt, honey, açai, eggs, egg yolk, and vanilla until no lumps remain. (You do not need to use a mixer.)
Pour into a square eight-inch pan and bake for 20-25 minutes, or until the edges are set but the center still has a slight jiggle.
Keep the cheesecake in the oven, turn it off, and open the door an inch or two so the heat escapes slowly.
Mix powdered sugar, one tablespoon açai, and lemon juice. If the glaze is too stiff, add more açai slowly until desired consistency.
Pour glaze over cooled cheesecake and finish with sesame seeds, if desired, and relish in a few minutes of physical self care!
