I have been cooking gluten-free meals for many years....
I always find cooking to be a welcome challenge, and I enjoy the feeling of coming up with something that is truly delicious and does not rely on ingredients like cup-for-cup flour. And what's super important to me is that it works for everyone around the table. No guest needs to feel like they are singled out by a separate menu. It's awkward and unnecessary.
There are so many things that can really be enjoyed by all, and no one will even notice that they are missing out on gluten products!
Let's think out of the box for our family and friends on gluten-free diets and flex our considerate muscles. It is usually very appreciated.
