Pulled Chicken Tacos Recipe
Ingredients:
3 boneless skinless chicken breasts
Generous dashes of your favorite BBQ rub
3/4 cup BBQ sauce (store-bought or homemade)
1/4 cup water
Directions:
1. Preheat oven to 325 degrees Fahrenheit.
2. Sprinkle both sides of the chicken generously with BBQ rub.
3. Place the chicken in an oven-safe dish or pot. Add in the BBQ sauce and water.
4. Bake for 90 minutes.
5. When the chicken is ready, remove it from the pot and shred with two forks. Heat the remaining BBQ sauce and add in the shredded chicken.
Pico de Gallo
Ingredients:
1 plum tomato, diced
1 small red onion, diced
1 jalapeno, diced
1 lime, juiced
salt to taste
1 bunch cilantro, cleaned and chopped
Directions:
1. Combine the pico de gallo ingredients in a bowl.
2. Assemble your tacos and drizzle with spicy mayo (mayo + hot sauce) if desired. Enjoy!
