The recipes below are for those who have either cooked ahead and have most of their dishes in the freezer and just need a few more recipes that can be whipped up in a flash, or those who have nothing cooked yet and desperately need delicious recipes that can be made a couple of days before Rosh Hashanah starts.

We’ve all been in both situations, so we know what it’s like to need super simple, quick recipes that are still Rosh Hashanah-worthy.

Pasta salad, autumn edition. It’s always delicious to have little bites of meat in a side dish! In this dish, the spice in the Italian sausage perfectly complements the flavors of butternut squash and dried cherries.

2. Maple-Glazed Brussels Sprouts bu Naomi Hazan

This is a light and delicious side dish. You can spice it however you’d like, top with your favorite nuts…it’ll always be a winner.

It doesn’t matter what time of year it is, this is one of my favorites. I’ve been demonstrating it a lot at food events (it’s nice to see how such a gorgeous dish could be so effortless), and it finally makes it here for you. A little of the pomegranate reduction goes a long way (store in the refrigerator and bring to room temperature when ready to use…an A+ dinner when there’s seriously no time) or pour the whole thing over a side of salmon for a beauty on the Yom Tov table.

10. Roasted Cauliflower with Dates and Pine Nuts by Elky Friedman

I have a soft spot for this particular siman for three reasons. 1) I love dates; I snack on them all year round. 2) The date was always the siman that got my family to laugh when someone would inevitably make that famous wisecrack: “Yehi Ratzon that ‘so and so’ should get a ‘date’ real quick…” It started with me and moved down to each of my sisters as soon as they were eligible. Every Rosh Hashanah we always had someone new to tease. Now we’re up to my last sister (and may she get a date and be married real speedily)! Reason #3? This side dish. I do know that you all are always looking out for easy, quick and tasty (plus healthy) side dishes for Yom Tov. So here is my date-inspired side. Enjoy!

When I’m standing at the butcher counter deciding what kind of roast I want, brick roast is what my hand reaches for time and time again. It’s packed with flavor from all the marbling, and the herbs give it another dimension of flavor. You get the best results when you serve this medium rare.

16. Tzimmis Purée by Paula Shoyer

Not to make a whole tzimmis about it (tzimmis being Yiddish for “a big fuss”), but tzimmis, a stew of sweet potatoes, carrots, and dried fruit, is becoming one of those lost and forgotten jewels of Ashkenazi cuisine. I make it every Rosh Hashanah so my children know what it is. Here is my updated version, which truly tastes like my usual tzimmis, but is presented more elegantly as a French purée. I’m planning to serve it on Thanksgiving as well.
