Here is something special that you can send to someone you care about for any reason, and especially if they are under the weather. It involves no cooking or baking on your part and looks absolutely incredible. These soup in a jar gifts are like a hug in a jar! On the back of each tag I wrote the instructions for making the soup to make life extra easy for the recipient.
All you need to make the presentation beautiful is a glass or plastic mason jar, ribbon, and gift tags. I used a funnel to make pretty layers of each ingredient. No fancy crafting skills required! Each soup requires water + 1 additional ingredient to bring it all together, such as a can of diced tomatoes.
Lentil Curry Soup Mix
This Indian-inspired vegetarian soup has bold flavor with only a handful of ingredients. The dried chili is totally optional, but adds an added kick to the soup which pairs beautifully with the coolness of the coconut milk.
For the Jar:
2/3 cup Gefen orange lentils
2/3 cup Gefen green lentils
1 tablespoon curry powder
1 tablespoon dried chopped onions
1 tablespoon dried minced garlic
2 veggie bouillon cubes
1 small dried chile pepper (optional)
Required for Cooking:
4 cups water
1 14-ounce can of full-fat coconut milk
Directions:
1. To make the soup, add all the ingredients in the jar to a large pot, plus 4 cups of water and 1 14-ounce can of full-fat coconut milk.
2. Bring to a boil over high heat, reduce heat to low, and simmer until the lentils are tender, about 20 minutes.
3. Remove and discard the chile pepper before serving. Season to taste.
Bean Soup Mix
This soup is so hearty and filling. Send along a fresh baguette or loaf of sourdough to soak up the goodness.
For the Jar:
1/3 cup Gefen dried white small beans
1/3 cup Gefen split peas
1/3 cup Gefen dried pinto beans
1/3 cup Gefen dried great northern beans
1/3 cup Gefen dried kidney beans
1 teaspoon dry mustard
1 teaspoon paprika
1 tablespoon dried minced onion
1 tablespoon garlic powder
1 bay leaf
1 teaspoon rosemary
1 bouillon cube
Required for Cooking:
5 cups water
1 14-ounce can of diced tomatoes
Directions:
1. To make the soup, add all ingredients of the jar to a large pot, plus 5 cups of water and 1 14-ounce can of diced tomatoes.
2. Bring to a boil over high heat, reduce heat to low, and simmer until the beans are tender and the soup is thick, about 90 minutes, adding more water as necessary to soften the beans.
3. Remove and discard bay leaf before serving. Season to taste.
Split Pea Soup Mix
Split pea soup is without a doubt one of those classic favorite soups that is so comforting and delicious.
For the Jar:
1 cup Gefen dried green split peas
1 cup Gefen dried red lentils
2 tablespoons dried onion flakes
1 tablespoon garlic powder
1 tablespoon ground cumin (optional)
2 teaspoons dried basil
1/2 teaspoon celery seed
1 bay leaf
Required for Cooking:
6 cups vegetable broth
Kosher salt
Freshly ground black pepper
Directions:
1. To make the soup, pour the contents of the jar into a large pot.
2. Add the broth; bring to a boil over medium-high heat, then reduce the heat to medium, cover, and cook for about 1 hour, stirring a few times and adjusting the heat as needed, until the split peas are tender.
3. Taste and season generously with salt and pepper. Discard the bay leaf before serving.
