Hear me out when I say I’m not a tofu person, but I got to taste this recipe when Esty made it on set, and now I’m hooked. I knew this was going to be on my Nine Days menu way back when we filmed the episode in early spring. It’s an all-in-one supper, and the flavors are spot on.
Fun fact about me: my birthday is during the Nine Days (hence my name), so we’re celebrating with strawberry mocktails, since alcohol is out. And store-bought churros pair with a homemade dipping sauce because I prefer eating to baking on my special day.
